2022 was going to be a weird year, in a way. We left Colorado to live full-time in our RV in 2021, and we weren't sure how we were going to feel about it. We booked a lot of time in Colorado in the summer of 2022, just to make sure we didn't get homesick. We'd already spent four weeks at different campgrounds in the Denver area.
We'd be staying at St. Vrain State Park three times (!) in the summer, and this was our first stay. It was the closest campground to one of Monica's office, and luckily we really liked the park. Denver is a ghost town for camping unless you stay in state parks, and you can only stay in one for two weeks at a time.
We got there on Monica's birthday, and we weren't planning much. We decided to go to our favorite Peruvian restaurant down the road, Rosario's, with Allie. When we got there, Monica was completely surprised to find all of her friends there! It was such a fun time. It was such a shock that we didn't even get any pictures. The food and company were outstanding.
One of Monica's favorite restaurants is Flagstaff House in Boulder, and we also went there the next night. The food is amazing, and the service is top notch. Combine that with an incredible view of Boulder from the restaurant in the foothills, and it's no wonder this is one of our favorite places. Now that's a good birthday weekend!
Monica had to go to the office every day, so it was a pretty mellow week. We had a weekend day there, and we spent it on the longest ride we'd done yet, from St. Vrain State Park to the other side of Longmont.
We did our first 360-degree video on a bike ride, too, which was pretty cool. It's a long video, but we loved the ride so much we knew we'd want to relive it. We'll be back at St. Vrain many times in the future, and it's a good ride.
Yep, we even saw a bird in a see-through backpack. Even though it was just a week, we packed in the activities. Next, we headed for the Midwest and Monica's mom.
